They can have a blackberry or raspberry aroma and flavor, a spicy or tarry character, or even a jammy flavor. These vines produce the complex, concentrated grapes that Lodi has become renowned for. Once harvested, the grapes are transferred to tanks where they are warmly fermented to extract as much color and varietal character as possible. Once the fermentation approaches dryness, the grapes are pressed and put through a second fermentation, \"malo-lactic fermentation\", to soften the wine and give it the plush mouth-feel characteristic of Old Soul wines.
