Koch El Mezcal Ancestral Maguey Espadín de Jayacatlán From the mountains of Oaxaca comes a mezcal that embodies heritage, craftsmanship, and terroir. Koch El Mezcal Ancestral Maguey Espadín de Jayacatlán is produced in small batches using time-honored ancestral methods, preserving the artistry of mezcaleros who have perfected their craft across generations. Crafted exclusively from 100% maguey Espadín (Agave angustifolia) cultivated in Jayacatlán, this mezcal reflects the unique microclimate and soil of the region. The agaves are cooked in underground earthen pits, hand-milled with wooden mallets, fermented naturally in open-air wooden vats, and distilled in clay pot stills—a true ancestral process that yields extraordinary depth and authenticity. Agave Variety – 100% Espadín (Agave angustifolia). Region – Jayacatlán, Oaxaca, Mexico. Production Method – Ancestral: underground pit roasting, wooden mallet milling, natural fermentation, clay pot distillation. Flavor Profile – Earthy and mineral-driven with smoky undertones, layered with roasted agave sweetness, dried herbs, citrus zest, and a lingering rustic finish. Craft Heritage – Made in small quantities by master mezcaleros, honoring ancestral Oaxacan tradition. A spirit of profound character, Koch El Mezcal Ancestral Maguey Espadín de Jayacatlán is more than mezcal—it’s a story of place, people, and legacy, meant to be savored slowly and shared with reverence.
