One of the most popular chiles in Mexico is the chile guajillo also known as cascabel ancho in some parts of Mexico.
It's usually sun dried and used in salsas and sauces to provide a complex fruity and slightly smoky flavor.
Guajillo is high on vitamins C, B and minerals.
